Cheese with Fennel and Hazelnuts

Sometimes in the evening you just do not feel like cooking. In that case, this simple recipe is of great use. Just stop at the supermarket and buy some soft cheese or even sour cream (the cheese in my recipe is stracchino), a fennel bulb, hazelnuts, and some nuts, and you have a healthy dinner that is ready in no time.

The portions are small, so if you are hungry, double the ingredients. This recipe is my personal creation.

CHEESE WITH FENNEL AND HAZELNUTS
Preparation time: 15 minutes
(Serves 4)

8 oz. of soft cheese like stracchino (or sour cream)
1 fennel
¼ cup of hazelnuts, toasted and coarsely chopped
2 tablespoons extra virgin olive oil
1 tablespoons pumpkin seed oil (optional)
½ teaspoon sweet paprika (optional)
salt and pepper

  1. Cut the fennel into thin slices and place them onto four individual plates. Put a piece of cheese or a dollop of sour cream on top in the center and sprinkle with chopped hazelnuts.
  2. Pour the olive oil, pumpkin seed oil, salt and pepper. Emulsify with a fork and pour over each serving

Sprinkle sweet paprika over the cheese or sour cream and serve.
