Taste of the Garden Skewers

The success of “hamburgers” and all the typical preparations of fast food and kebabs is due to the fact that they are prepared in a way that is simple and easy to eat, soft and shredded into a sandwich or flatbread with some vegetables.

The idea is to use some of these principles to propose an evening at home where our children can eat something soft and delicious and we can control all the ingredients in the dish, thus promoting healthy eating.

TASTE OF THE GARDEN SKEWERS
Preparation time: 20 miunti | Cooking time: 30 minutes
(Serves 4)

1 ½ pounds of mixed ground meat (turkey and pork)
1 onion
8 cherry tomatoes
2 zucchini
8 bay leaves
1 egg
2 tablespoons bread crumbs
⅓ cup white wine
3 tablespoons extra virgin olive oil
salt and pepper
4 wooden skewer sticks

  1. Preheat the oven to 400°F.
  2. Cut the zucchini into eight pieces then mix the meat with the egg, bread crumbs, half the finely chopped onion, salt and pepper.
  3. Cut the remaining half of the onion into pieces that are a bit larger (for the skewer). Form the meat mixture into balls and put them onto the skewers, alternating the meat with the vegetables and the bay leaves.
  4. Place the skewers in a baking dish that has been greased with olive oil. Add a bit of salt to season the vegetables then moisten the skewers with white wine and bake for 30 minutes.
