Mini Towers of Smoked Trout

Smoked salmon trout is a specialty of Friuli. Large trout farms are favored by the quantity of spring water and by investments in both research and quality control that the regional institutions have carried out over the years. This very easy recipe is very effective. Smoked salmon can also be used if you live in an area that does not have smoked trout.

Ingredients

  • 6 pieces of smoked trout (or smoked salmon)

  • 1 package of whole wheat puff pasty dough

  • 100 grams (0.2 pounds) of robiola or a soft cheese like goat cheese or cream cheese or a combination of the two

  • Small jar of smoked trout or salmon eggs

  • 1 small jar of mostarda (the kind of with fruits in it, found in Italian specialty stores)

Directions

  • With a round cookie cutter, cut 12 circles of puff pastry and place them on a plate lined with parchment paper, pierce them with a fork and bake at 350 F for about 15 minutes, until they are golden brown.
  • Meanwhile, work the robiola cheese with two tablespoons of chopped chives and two tablespoons of mostarda liquid. Place some of this mixture over the first circle, add a small piece of trout and continue with the second circle; then add a little more mixture and a small piece of trout. Garnish with trout eggs and chopped mostarda, drizzle with a few drops of mostarda liquid.
  • Serve immediately as soon as they are ready to prevent the dough from softening.
