Salmon with Sicilian Citrus

Starting from the principle that it is always necessary to let the little ones experiment with new but at the same time simple in preparation tastes and flavors, last night we experimented with this salmon in the oven with citrus fruits.

It was also an opportunity to use some kumquats (Chinese mandarins) that had been in the fruit bowl since Christmas.

We accompanied the salmon with baked potatoes, so they could cook at the same time, even if in different trays, still saves electricity and time.

 Leonardo liked the dish very much. I eat salmon willingly in all ways.

Salmon with Sicilian Citrus

Ingredients

  • 4 boneless salmon steaks

  • 1 large orange

  • 1 lemon

  • 5 – 6 Kumquats

  • 2 tablespoons of extra virgin olive oil

  • 20g of butter

  • Salt and pepper

Directions

  • Turn on the oven at 400 degrees
  • Cut the orange and lemon into slices. The kumquats in half.
  • Rinse the steaks and dry them.
  • Put the oil in a casserole dish, arrange the slices, add salt and pepper, and place a slice of orange and lemon on top of each slice, arrange the rest of the citrus fruits on the sides.
  • Add a few pieces of butter on top of the citrus slices (it will give a special taste to the sauce that will form).
  • Place in the hot oven and cook for 20 minutes.
  • Serve the slices with their sauce and for adults, also with the citrus slices.
